    [лат. fermentum — закваска; лат. re- — приставка, обозначающая повторность действия или противоположное действие, и actio — действие]
    изменение концентрации субстрата или продукта за единицу времени (моль / л ×с), показатель каталитической активности фермента. Так как каталитическая активность не зависит от объема раствора, в котором протекает реакция, С.ф.р. выражают в каталах (кат); 1 кат — это количество фермента, которое превращает 1 моль субстрата за 1 с. Другой единицей активности является международная единица (E) — количество фермента, превращающего 1 мкмоль субстрата в 1 мин (1 E = 16,7 нанокатал). Активность фермента зависит от ряда факторов: температуры, реакции среды (pH), концентрации фермента, концентрации субстрата, от присутствия специфических активаторов и неспецифических или специфических ингибиторов.
